Rotiserrie Chicken with Fresh Herbs Pizza



This is a great way to use up left over chicken. 


I baked this pizza on an oregano crust that I made from scratch.

Oregano Pizza Crust

1 1/2 cups of flour
1 level tbsp of baking powder
1tsp of salt
1 tbsp of dried oregano
1/2 tbsp of sugar
2 tbsp of cooking oil
3/4 cups of water

Directions

Combine all of the dry ingredients together thoroughly. Make a hole in the center and add the oil and water. Mix the ingredients together until it forms a ball. Add more water if necessary.  On a floured surface, roll out dough to desired thickness and place in pie pan.

Pizza Filling

Shredded chicken meat with skin removed
1/2 cup of coarsely chopped chives
3 tbsp of tomato sauce (your choice)
3 sprigs of fresh thyme
1/2 clove of garlic diced
1/2 cup of shredded gouda cheese
1 tsp of black pepper
Chopped parsley for garnish (optional)

Directions

Spread tomato sauce on pizza base. Next, sprinkle chives over the sauce. Apply chicken on top. Place garlic  through out the pizza. Sprinkle black pepper on top the chicken. Remove  thyme leaves from the stems and spread over the chicken. Finally add the gouda and sprinkle the parsley on top. Bake for 25 mins at 350F. Remove from oven and serve.

All ready to go into the oven!

I could never get my crust perfectly even, lol. I think it looks more rustic this way.
